Breakfast Meal Prep!

Happy Wednesday!

This week, I was looking for new meals for breakfast. As you all know, I have two favorites that I usually rely on. Either my egg muffin frittatas or my turkey bacon, egg and cheese on french toast sandwich. They sound so amazing! I know! But, it was time to throw something new into the mix.

I had some pita bread that was going to go bad soon and I needed to incorporate that into this week’s meal prep. I found this amazing recipe on Pinterest. I altered it a little to fit what I had in the kitchen already. I took whatever cheese and vegetables needed to be used up and tossed it in!

All of these ingredients are what was left in my fridge. I would probably use better measured ingredients next time! I’ll put them here anyway because this is what I ended up doing.

  • 7 eggs
  • 1/2 cup of shredded cheddar
  • Handful of baby spinach (cut in half)
  • 6 grape tomatoes
  • 3 turkey sausages (cooked)
  • Splash of almond milk
  • 3 Wheat pita pockets (cut in half)


I mixed together the eggs, cheese, spinach and tomatoes first. I cooked three frozen sausages and added them to the mix. I used salt, pepper, and herb seasoning. I also added a bit of milk because it’ makes it a little more fluffy. I haven’t had regular milk in a long time, that’s why I decided to use almond milk. Either will work! I sprayed nonstick spray on the pan and tossed everything in!


After everything was cooked and scrambled, I stuffed the pita pockets. Next time, I think I will wait to stuff them because they were a tad soggy when I reheated them. They tasted amazing though! Try the recipe and make sure to let me know what you think.
