Pinterest Meal Prep

If you’re super busy like me, you do not have time to make three meals a day, every day. I like to do my meal prep on Sunday and eat it throughout the week. It limits my food waste and saves me so much time and money throughout the week. Since I started meal prepping, I noticed that not only do I eat healthier, but I also eat out less. Most times I meal prep using something off of pinterest, but when funds are tight, I throw together a bunch of stuff from my cabinets and hope it tastes good. In another blog, I will post my grocery staples to make sure that I am alway prepared for a budget week.

Breakfast:

I typically like to make egg muffins. They are filled with protein, veggies and flavor. I absolutely love these especially because they’re so quick and easy to make. I have found many recipes but typically find myself throwing in whatever cheese and veggies I have available in my fridge. My fave combo is: goat cheese, spinach and grape tomatoes. Lunch:

My lunch meals range from week to week. Lately, I’ve been super obsessed with different types of lunch bowls. My absolute favorite is a chicken fajita quinoa bowl. Uhm, can you say yum? It’s so tasty and healthy. I mean, it has quinoa, veggies and protein. It doesn’t get any better than that! I have only followed this recipe but the next time I make it, I will be altering it. Not because I dislike it, just because I like to try new things!

Dinner:

Literally anything pasta. If you don’t eat many carbs, then I am probably the wrong person to take advice from. I absolutely love anything with pasta and bread in it. On the other hand, if pasta does make you happy, I have the most delicious recipe for you.

Tips:

WIth my breakfast, I usually have a packet breakfast essentials with almond milk. I will also occasionally drink a green juice (sometimes fresh, sometimes store bought). With my lunch I always include: 1 cup of fruit, 1 cup of veggies, and 1 dairy. I have a gastrointestinal disorder, that slows down my digestion.
